A message («tomorrow at twelve, something pink, about 40») taken down as an order to be paid later: customer, address, time slot, notes, payment pending. Then the payment, the receipt, and the filter for unpaid orders.

A message: tomorrow at twelve, something pink, about forty euros. Before, a sticky note on the fridge.
Write it down as an order, even if she pays tomorrow.
The same Create New Order. You choose the customer, or create her: name, phone and email.
If you're delivering it: the address, the day and a time from your slots, and what you charge for delivery. In the notes, what she asked for: something pink.
And here's the important part: Payment Status, pending. Create Order. Now you know what you have to prepare, and for when.
In Orders you find it by customer, phone or address, or filter by date. Inside, the whole order. And if you want her to pay first, Generate Invoice gives you a payment link to send her.
When she pays, online or in the shop: the pencil, Payment Status, paid, and Update Order. The receipt prints. Nothing to write out again.
And on the web, in Order Management, you filter by Payment Status and see at a glance what's paid and what isn't.
